As crazy as this sounds, this breakfast taco was really good. I made it several years ago on my way out the door. I was working 8 a.m. to 11 p.m. mon-sat and had zero time to eat so I needed sustenance. I have no idea why I took the picture of it but, I ended up posting it to my Twitter and it got more views and likes than anything else. Go figure. Nevertheless, it’s so simple and made with such common ingredients that a struggling college student should have no problem throwing this together before class.
4 flour tortillas
1 c crunchy peanut butter
1 tbs butter
6 lg eggs
1 tbs milk
4 slices yellow American cheese
4 slices black forest ham
4 tbs salsa ,(your favorite store-bought will work fine)
Heat your tortillas until warm and pliable. (I simply heated mine in the microwave. Once the tortillas are hot, seperate them on a clean workstation. Smear ¼ c peanut butter on each tortilla. Melt butter in a nonstick pan over medium heat. While the butter is melting, whisk eggs and milk together in a bowl. Pour into pan and allow to cook for a couple of minutes without touching them. After about 2 minutes, fold over using a rubber spatula. Allow to cook until completely cooked through. Distribute equal amounts of the eggs onto the peanut butter coated tortillas. Quickly lay 1 slice of cheese over each taco. Top with 1 slice of ham each and finish it off with 1 tbs salsa each. Finito!
