Super Easy Summertime Fruit Salad W/ Local Honey

To be perfectly honest, I have ALWAYS had a problem grabbing fruit instead of candy or flopping down on the couch with a box of cereal. Fortunately, I am starting a unique diet tomorrow and have been pushing myself to go for a nectarine instead of candy in the last week, the fruit leather I ate today does not count since my diet officially starts tomorrow. So, I decided to prep a few things today with one of those things being fruit salad. Now, if you aren’t partial to kiwi, simply omit it like this…

But, I like kiwi and that vibrant green adds color to the salad. I suggest adding minced mint leaves to the individual servings. I made the mistake of adding it to the whole salad last week and boy was that a mistake. The mint wilted and faded and just did not look appetizing after a day or two. So, here you go, a fabulous fruit salad to tame the sugar monster within.

10 med-lg strawberries, halved

1 med nectarine, pitted and sliced thin

1/2 c blueberries

1/2 c raspberries

1/2 c blackberries

1 lg kiwi, peeled, halved and sliced thin

3 good tbs local honey

This is one of the easiest recipes you’ll ever come across. Transfer all of the fruit to a bowl, pour honey over top of the fruit and gently toss. Cover and refrigerate until ready to serve. Voila!
