
When I put this mix together, I was trying to mimic a spread I had decades ago. It was sold by a celebrity chef but, unfortunately, didn’t seem to make the cut with the general public. I don’t know if it was the price, or something the public just wasn’t ready for. The spread disappeared from shelves across America just as fast as it appeared and I was left spreadless. Although this isn’t exact to that delicious spicy artichoke spread I had so many years ago, it’s pretty close. I put this together everytime I make wraps and it totally makes a difference.
1-8 oz package of cream cheese, softened
2 tbs real mayonnaise
1/4 c freshly grated parmesan cheese
1 tsp garlic, minced
1 large jalapeno, seeded and fine minced
1-13.75 oz can artichokes, quartered
To make the artichoke spread, combine all ingredients in a medium sized bowl. Mix thoroughly and refrigerate for a minimum of two hours. Easy Peasy.
