
I love making my own creole spice. It gives me the ability to add as little or as much salt as I want. Although I reserve this spice specifically for shrimp creole, you can use this for blackening Spice, gumbo and cajun pasta.
1 tbs kosher salt
3 tbs paprika
2 tbs garlic powder
3 tbs onion powder
2 tbs blk pepper
1 tbs white pepper
1 tbs cayenne
1 tbs thyme
1 ½ tbs Italian seasoning mix
Pour all ingredients into a bowl and use a fork to mix well. Store in a Mason jar until ready to use.
