Balsamic Nectarine, Basil, Prosciutto And Local Honey Salad W/ Pickled Onions
When I’m too tired to make myself anything, my dinners usually look something like this. A few simple ingredients thrown onto a plate and there you go, easy peasy lemon squeezey. Salty prosciutto, bitter-sweet balsamic, sweet nectarines, pickled onions and aromatic basil all conspire to make a fantastic lite meal.
1 handful sweet basil leaves ¼ c pickled red onions 1 nectarine, pitted and thinly sliced 3-4 slices prosciutto, torn in half lengthwise 1 tsp balsamic glaze ½ tsp local honey
Spread out your basil across a salad or pasta bowl. Arrange the nectarine slices, prosciutto and red onions. Drizzle with balsamic and honey. Voila! A simple summer salad to beat the heat.
