
Beignets are a staple in Nola (New Orleans), alongside a steaming cup of coffee. My first introduction to an authentic beignet was after a long night of exploring the French quarter, and let me tell you, I was not in the mood to eat anything much less walk anywhere. But, that sugary-crispy breakfast food really hit the spot. I liked them so much, I decided to try and mimic the recipe. Although, it’s not exact, it sure does come close. 1 can plain biscuits
2/3 c powdered sugar
Preheat your deep fryer to 375˚ Fry biscuits in batches of 3 to 5 at a time, depending on the size of your deep fryer, for roughly 2-3 minutes on each side. You can test your biscuits by inserting a toothpick into the center of one. If the toothpick comes out clean with no dough, they are done. Allow to drain on a paper towel lined sheet pan. Allow to cool slightly. Sift powdered sugar over the tops of your biscuits and serve with coffee or hot chocolate.
