
This was actually a REALLY good salad. I wasn’t sure how it was going to turn out but, since I’m still dieting, and documenting some of it to post once its all done, I wanted something light for dinner. I had some fresh picked grapefruit from the backyard and salty prosciutto (I love Italian cured meats), and a bunch of greenleaf. Throw it all together and you have a pretty darn good insalata!
2 c greenleaf lettuce, torn up
3 lg pieces of Prosciutto, torn in half lengthwise
1/4 c parmesan, shaved
6 grapefruit sections
Lay out your lettuce on a chilled plate. Roll your strips of prosciutto and arrange over the lettuce. Sprinkle the grapefruit pieces around on the salad and add the parmesan. I did squeeze 1/2 a lemon over the lettuce while I was putting this salad together but, for me, it proved to be too bitter for the prosciutto.
