I was never planning on posting this recipe, but I figured, “Ehhhh, why not?” I’m a complete and utter pasta freak. Although there was not any Italian found in my family tree when it was investigated way back in the 80’s, I’d honestly be surprised if there really wasn’t any at all. So, here it is, an light and easy pasta that can be thrown together in a matter of minutes.
1 lb of pasta of your choice, boiled
1/2 lb prosciutto, sliced
2 c marinated mozarella
2/3 c fresh grated parmesan
1 1/2 c fresh sweet basil leaves
Fresh cracked pepper to taste
Once the pasta has boiled, drain and rinse well. Set aside for a couple of minutes to drain.
While the pasta is draining, cut the marinated mozarella into 1/2″ chunks.
Start dividing the pasta equally into bowls. Sprinkle with pepper. Tear up 2-3 strips of prosciutto per bowl. Toss in some chunks of mozarella, tear up about 6 large leaves of basil per bowl and sprinkle with the parmesan. There you have it. Super simple pasta Italiano.
