This is one of those super simple recipes that only take a few minutes, but come in very handy when time is of the essence and dinner needs to be done NOW.
1-14oz can quartered artichoke hearts, drained ½ tbs olive oil Kosher salt and fresh cracked pepper to taste
Preheat oven to 400° Arrange the hearts on a lined sheet pan and pat dry with paper towels. Drizzle olive oil over the hearts. Sprinkle with the salt and pepper. Give them a little toss.. slide the sheet pan into the oven and roast for 10 minutes. Set oven to broil. Allow the hearts to broil for 3-5 minutes or until they begin to crust up on the outer edges. Remove from oven and add to your favorite salads or as a side. Easy peasy.
