Baked Thanksgiving Turkey Sandwich

This is another one of my crazy recipes from “Eat My Biscuits” . I put this little innovative sandwich together right after Thanksgiving 2019.

I’m notorious for always making too much food then, giving it all away. I remember gazing into the fridge at all the Thanksgiving leftovers and just rolling my eyes. One deep sigh and a can of biscuits later and voila. A very different, but delicious way to utilize that Thanksgiving dinner.

This recipe lacks measurements as different people have different amounts of leftovers. Simply eyeball the amount you want to use and create!

Leftover stuffing
Leftover turkey
1 can flaky layer butter biscuits
8 slices of provolone, (use your favorite cheese)
Leftover cranberry sauce
Fresh parsley, rough chopped (optional)

Preheat oven to 340˚
Heat stuffing and turkey just enough to warm through. Set aside. Separate all your biscuits on a nonstick workstation. Press each biscuit as flat as you can using your hands to create a 6-7 inch disk. Set on workstation and sprinkle with stuffing, pressing the stuffing into the biscuit. Turn over and repeat. Place one slice of cheese in the center of each biscuit and top with some turkey and about 1-2 tsp cranberry sauce. To add a bit of color, you can sprinkle a little parsley over your filling. Fold one side over, pressing edges together. Arrange on a nonstick sheet pan and bake for 30-40 minutes or until your packets begin to brown. Serve with gravy for dipping or even add some fries to your filling and say, “Sayonara”, to your leftovers.
